Several weeks ago, we came across a bottle of Black Chook Sparkling Shiraz at Momofuku Ssam Bar in East Village (available for $19.99 at Drink, E 69th St at 2nd Ave.) . Nobody at our table had ever tasted sparkling red wine, and we were curious to see how it compared the more familiar prosecco and champagne. The intense fruitiness of good Australian Shiraz spiked with a delightful fizz made the Black Chook an instant winner – we loved how it paired with the pork bun and the rib-eye. This month, we feature four other bottles of sparkling Shiraz, deep purple, fruity, and best served slightly chilled.

Reilly’s Sparkling Mad

from Clare Valley in South Australia is ideal for a celebration involving lots of food (think BBQ or Thanksgiving).

You’ll find notes of red and black cherry, ripe berries, and plum in this bubbly wine, a perfect complement to heavy meats like steak and lamb as well as turkey with stuffing.

Fox Creek Vixen

from the McLaren Vale region of South Australia, is a shiraz-dominated blend with cabernet franc and cabernet sauvignon.

aged in French oak for 2-plus years in Padthaway, Australia, is a sure pick as a summer wine.

With a fruity nose and a cassis (sweet blackcurrant liquer) flavor, the Hill of Content works well as an apéritif, enjoyed on its own as an appetizer or before a big meal.
